Control extraction before sweetness

Water temperature, steep time, herb quantity, and dilution determine whether a drink tastes fragrant, grassy, bitter, or flat. Taste the unsweetened base first, then add sweetener and citrus in small increments. Floral waters are concentrated ingredients; measure them rather than pouring directly from the bottle.
